Chef * Arabian Spinach

In our house, we love spinach. We eat it at least once a week.I also need it because I need more iron but that’s a different matter, right? I mean, who eats because they need to? We eat because it tastes good .. I mean yeah, I ALWAYS eat health. :)

Anywayz, I am here to share a taste good/healthy mean! Two in one, can’t beat that can ya? :)

 

Preparation:
(serves 2)

  • 1 yellow or red onion
  • tomato (optional)
  • 2 tbsp oil of choice
  • 14 oz of spinach (fresh or frozen)
  • 1-2 cloves of garlic
  • 1/4 tsp cumin seeds
  • 15 oz (1 can) chick peas 
  • salt to taste
  • black pepper to taste

Spices (optional if you want more flavor)

  • 1 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 3/4 tsp garma masala
  • 1/4 tsp turmeric

 

  1. Slice the onion in thin long slices.
  2. Shred/cut the spinach.
  3. Wash or drain the chick peas.

 

Cooking:

  1. On a hot pan, add the oil and cook onions until soft (stir often). About 5 minutes.
  2. Add the garlic and cumin seeds and stir, about 1 min.
  3. If you are adding the spices, add now and stir. 
  4. If adding spices, add tomatoes now.DSC05061
  5. Add the spinach slowly. It will condense as it cooks. Then add salt. DSC05063
  6. Add the chick peas. Stir about 5-10 minutes
  7. If you have added the spices, add some water, bring to a boil then cover and let simmer for 10-15 minutes.

Serve with rice or roti.
