Mexican! One of my favorite cuisines. This is an easy recipe and can be ready within 30-40 minutes. Good food fast means I’m happy!
Preparation:
(serves 4)
- 1 can red kidney beans (refried or whole)
- 4 tortillas
- 1 yellow or red onion
- 1/2 green pepper
- chipotle pepper (optional)
- salt to taste
- cheddar cheese
- mozzarella cheese
- salsa
- 1/2 can enchilada sauce
- oil
- Dice the onion and green pepper in to small squares.
- If using whole kidney beans, grind so that it is semi smooth.
- Grate the cheese.
Cooking:
- On a hot pan, cook onions and green peppers until soft (stir often).
- Add the kidney beans and stir.
- Add salt and chipotle peppers. Stir.
- Add some of the grated cheese. Stir.
- Take a tortilla and line with cheese on half of the tortilla, then fill with the beans. Fold in half and place in a baking pan.
- Once all tortillas are prepared in the baking pan, sprinkle the cheese and the enchilada sauce.
- Bake for 10 minutes.
This can be made into burritos as well. Doesn’t that look good?
